If you're looking specifically for the lightest, crispest expression of Verdeca, another bottle may suit you better. Talò deliberately sits on the more textured and rounded side of the grape's character.
Talò Verdeca is made entirely from Verdeca grown in the hills of northern Taranto in Puglia, around 100 metres above sea level. Significant differences between daytime and night-time temperatures help the grapes retain freshness as they ripen.
The grapes are harvested in mid-September and receive six to eight hours of cold pre-maceration before fermentation takes place in French-oak barrels.
The wine then remains in French oak for three months with periodic bâtonnage. This gives Talò additional texture and subtle vanilla while softening Verdeca's naturally lively acidity without losing the freshness and mineral character at the heart of the wine.
Talò Verdeca is particularly well suited to seafood and shellfish, as well as fish served with lighter sauces. Its combination of freshness and gentle richness also makes it a good partner for seafood pasta and Mediterranean starters.
Serve chilled at around 10–12°C.
