The wine is a straw yellow with a complex floral nose of tropical fruits mingled with subtle lime and gooseberry undertones.
The palate is balanced and rich, showing cut green apples with great minerality and texture and a dry, satisfying finish.

Grapes for Sophie Sauvignon Blanc are sourced from 7 different growers situated in the Cape South Coast region. 71% of the grapes are sourced from Elgin itself, with 19% from Hermanus and 10% from the Botriver region.
Grapes are hand harvested and destemmed. Juice settled for 24 hours, before being racked and inoculated with selected yeast strains. Wines were kept on the fine lees for 4 months before being bottled without aby oak aging.
