Why It Tastes This Way

Il Pumo is made entirely from Negroamaro grown around San Marzano in Salento, approximately 100 metres above sea level. The vines are espalier trained and grow in shallow, clay-rich soils with a significant presence of rock.

The grapes are harvested around the middle of September and undergo approximately ten days of temperature-controlled maceration and alcoholic fermentation with selected yeasts.

Crucially, San Marzano matures Il Pumo entirely in stainless steel rather than oak. That keeps the emphasis on Negroamaro's dark fruit, spice and savoury character without adding vanilla, toast or additional weight from barrel ageing.

The result is a useful introduction to the grape: generous and full-bodied enough to satisfy drinkers accustomed to richer southern Italian reds, but fresh and direct enough for Negroamaro itself to remain the focus.

Food Pairing & Serving

Serve at around 16–18°C with hearty pasta dishes, pizza, grilled or roast meats, burgers, charcuterie and mature cheeses.
