Tasting Notes
A lovely deep red colour, this wine is bursting with cherries on the nose, and has a well structured and deep flavour, with a hint of sweetness from the Ripasso dried grapes.
The wine is super smooth and the aromas follow through to the palate with red and black cherries.
The finish is a rich velvet, long and fruity finish.
About
As with most Valpolicella wines, this is a blended red using 75% Corvina Veronese grape with 20% Corvinone and the remaining 5% Rondinella.
Ripasso wine making is a technique where the fermented wine is passed over the dried grape skins from Amarone wine, allowing a second fermentation.
This technique creates a more structured wine, with softer acidity giving complex and rounded Valpolicella wines.
The grapes are hand picked and placed in wooden cases, either at dawn or late in the evening, to avoid the intense heat of the day. Ripasso wines benefit from extra structure and fruit delivered by using the skins of the sun dried grapes.
About half the wine is aged in oak barrels for 12 months, with a light refinement in barriques, before bottling.
