Lo & Behold is crafted in Piekenierskloof in the Western Cape of South Africa, from vineyards located in the undulating terrain of the Swartland region. The estate draws on the cool nights and hot days of the Mediterranean style climate to produce wines of clarity, vibrancy and regional character.
Vineyards: The grapes for Lo & Behold Chenin Blanc Viognier are rooted in sandstone soils that help develop slow ripening and complex flavour. The blend comprises primarily Chenin Blanc with a proportion of Viognier to enhance aromatic intensity and texture. The vines benefit from hand harvesting and careful vineyard management to ensure purity of fruit.
Winemaking: The Chenin Blanc and Viognier components are vinified separately: the Chenin portion undergoes natural fermentation largely in stainless steel, with approximately 10% aged in old French 300L oak barrels; the Viognier component is fermented in cement tanks. The wines are blended before bottling to capture both fruit freshness and refined complexity.
