San Marzano Timo Vermentino is a wonderfully fresh, characterful alternative to the usual dry Italian whites. Made from 100% Vermentino grown near the coast around Brindisi, it is fermented and aged entirely in stainless steel to preserve its fragrance and freshness. Choose Timo if you enjoy crisp, dry whites but would like to explore beyond familiar Sauvignon Blanc or Pinot Grigio. It delivers plenty of freshness while adding the distinctive herbal, mineral and lightly saline character that makes Vermentino particularly interesting.
It's also a good choice if you prefer your whites unoaked. Five months in stainless steel keeps the emphasis firmly on citrus, flowers, Mediterranean herbs and freshness rather than adding vanilla or creamy oak flavours.
If you're looking for a richer, rounder or noticeably oaked white, another bottle will suit you better. Timo is deliberately about freshness, fragrance and Mediterranean character.
Timo is made entirely from Vermentino grown around Brindisi in Salento, approximately 100 metres above sea level. The vineyards have shallow, predominantly sandy soils and a temperate microclimate influenced by their proximity to the sea.
The grapes are harvested in the last week of August and, after destemming, spend a few hours in contact with their skins at low temperature before pressing. This helps capture more of Vermentino's natural aromatic character.
Fermentation takes place in stainless steel for 13–15 days at around 15°C, followed by five months' maturation in stainless steel. With no oak involved, the emphasis remains on the grape's citrus, white-flower and Mediterranean-herb aromas and its naturally fresh, mineral character.
The name Timo means thyme in Italian, reflecting the Mediterranean vegetation of Puglia's coastline and the distinctive herbal character found in the wine.
