Bodegas Pisuerga Aguazul Organic Verdejo is exactly the sort of Spanish white to reach for when you want something crisp, refreshing and effortlessly enjoyable. Ripe lemon and delicate tropical fruit give it plenty of immediate appeal, while Verdejo's characteristic herbal freshness and a twist of fennel provide a distinctive alternative to Sauvignon Blanc.
Made from 100% organically grown Verdejo in the heart of Rueda, the grapes are harvested at night and the wine sees no oak, preserving its bright, clean fruit. Three months of lees stirring adds just enough texture to complement the lively acidity without sacrificing that wonderfully refreshing character.

Palate: Fresh and beautifully balanced, combining juicy lemon and tropical fruit with lively acidity and a gentle textural quality from time on the lees. Clean, vibrant and easy drinking without being simple.
Finish: Refreshing and persistent, with citrus freshness and a characteristic herbal twist of fennel lingering on the finish.
About
Bodegas Pisuerga is one of Rueda's longstanding wineries, based in La Seca at the heart of this famous Spanish white wine region. The winery specialises in classically styled Verdejo and places particular emphasis on organic viticulture, healthy soils and capturing the fresh, distinctive character of the grape.
Winemaking: The 100% Verdejo grapes are harvested during the cool of the night to protect their freshness and aromatic character. Fermentation takes place in stainless steel with no oak ageing, followed by bâtonnage – regular stirring of the fine lees – for at least three months. This builds subtle texture while retaining the wine's vibrant fruit and acidity.
Vineyards: The Verdejo comes from certified organic vineyards in and around La Seca in the heart of DO Rueda. Cover crops, organic manure and other organic vineyard practices encourage healthy, diverse soils and help reduce the need for intervention, allowing the quality and character of the fruit to take centre stage.
Food Pairing
Excellent as a refreshing aperitif or with seafood, grilled fish, salads and fresh vegetables. Its citrus freshness and herbal character also work particularly well with Mexican dishes such as fish tacos and chicken enchiladas.
