Tasting Notes
Elegant, full-bodied and buttery white Burgundy, notes of citrus and honey in perfect balance, all warmed by a perfume of toasty oak. The finish is long and expressive. Very fine.
About
The Chavy family can trace their ancestors in Puligny Montrachet for around 200 years and up until 1986, sold their wines to negotiants. Then in 1986, Gerard Chavy started to estate bottle his own wine. Today, the estate is split between the two brothers Jean-Louis and Alain Chavy.
With Jean-Louis' vineyards very well-placed in Puligny, his wines are consistently excellent and show real purity and class. They age gracefully and retain minerality whilst developing classic Burgundy characteristics associated with the great crus.
The cellar is clean and very modern, with temperature control, a pneumatic press and stainless steel tanks.
Harvesting is performed by hand and the grapes are crushed and pressed immediately upon receiving.
Fermentation begins after racking off the gross lees and ageing takes place in older French oak barriques in contact with the fine lees. These are stirred occasionaly in order to incerease the wines complexity.
The resultant Montrachet is bottled with a light filtration.

White meat and poultry with rich white sauces. It also works very well with most cheeses, although avoid blue cheese. Great also with fried asparagus and mixed green salad, fried shrimp, and poached salmon with tarragon sauce.
