Litmus White Pinot is an intriguing English white made entirely from Pinot Noir, offering something genuinely different from both conventional white wine and red Pinot Noir. Peach and honeysuckle meet subtle smoky notes, while extended ageing on the lees creates a rich, silky texture balanced by a firm backbone of fresh acidity.
Fermentation and maturation in older French oak add complexity and breadth without overwhelming the fruit. Full-bodied and unusually structured for an English white, this is a particularly interesting choice for adventurous wine drinkers, combining the freshness of England's cool climate with the weight, texture and complexity more normally associated with serious barrel-aged white wines.
Tasting Notes:
Nose: Complex and distinctive, with peach and honeysuckle alongside subtle smoky notes and gentle hints of mature oak.
Palate: Full-bodied, rich and silky, with ripe stone fruit and floral character supported by subtle oak and lees-derived texture. A firm, steely backbone of acidity cuts through the richness, giving the wine impressive balance and structure.
Finish: Long and complex, with lingering peach, gentle smoke and creamy texture balanced by fresh, persistent acidity.
About
Litmus Wines was established with the aim of demonstrating a more complex and ambitious side of English still wine. Winemaker John Worontschak has been making wine in England since the late 1980s, and the Litmus range was developed to move beyond simple fruit-driven styles towards wines built around balance, complexity, texture and length.
White Pinot is perhaps the clearest expression of that philosophy. Although Pinot Noir is normally associated with red wine, its juice is naturally pale. By gently pressing the grapes and avoiding prolonged contact with their dark skins, Litmus creates a still white wine entirely from Pinot Noir. The result combines the freshness expected from English wine with considerably more weight, texture and complexity than its pale appearance might suggest.
Winemaking: The Pinot Noir grapes are handled gently to extract the juice without significant colour from the skins. The wine is fermented and matured in older French oak barriques before remaining on its full lees for 14 months. This extended maturation builds richness, texture and complexity while older barrels contribute subtle oak character rather than dominant new-oak flavours.
Vineyards: Produced from Pinot Noir grown in England's cool climate, where naturally high acidity provides an important counterpoint to the wine's unusually rich texture. The combination of cool-climate fruit and extended cellar maturation gives White Pinot its distinctive balance of freshness, weight and complexity.
Food Pairing: Its richness and structure allow it to accompany considerably more substantial dishes than many English white wines. Try it with roast chicken, pork, creamy mushroom dishes, smoked fish, richer seafood, Asian-inspired dishes or mature hard cheeses.
