Prophet's Rock Infusion Pinot Noir is a lighter, more vibrant expression of Central Otago Pinot Noir, made using an unusual gentle infusion technique rather than seeking maximum extraction. Bright cherry and plum combine with floral notes, gentle spice and subtle smokiness, supported by fine tannins and refreshing acidity.
Fruit from a single steep, schist-rich vineyard is fermented with indigenous yeasts in neutral oak, with no malolactic fermentation to preserve freshness. Delicious lightly chilled, this is a particularly appealing Pinot Noir for someone wanting purity, energy and drinkability rather than the richer, more concentrated style often associated with Central Otago.
Tasting Notes:
Nose: Bright and aromatic with fresh cherry and floral notes, accompanied by plum, gentle spice and a subtle smoky character.
Palate: Light and vibrant, with pure cherry and plum fruit joined by crunchy red berries and delicate spice. Fine tannins provide gentle structure, while lively acidity keeps the wine exceptionally fresh and energetic.
Finish: Fresh and pure, with lingering red fruit, gentle spice and fine acidity rather than weight or heavy tannin.
About
Prophet's Rock is a Central Otago producer with vineyards in Bendigo, where winemaker Paul Pujol takes a restrained approach intended to translate individual vineyard sites into wine with as little winery signature as possible.
Infusion Pinot Noir offers a deliberately different expression of Central Otago Pinot Noir. Rather than pursuing the region's richer and more concentrated side, gentle extraction creates a lighter, highly aromatic wine built around pure fruit, freshness and drinkability. It can even be served lightly chilled, making it a particularly versatile style of Pinot Noir.
Winemaking: The hand-picked Pinot Noir is destemmed into a small tank and allowed to gently infuse in its juice for around 10–14 days. As indigenous fermentation begins, the fruit is pressed and fermentation continues in neutral oak barrels. The wine remains on its yeast lees until bottling and does not undergo malolactic fermentation, helping retain its distinctive freshness and energy.
Vineyards: The fruit comes from a single block of Prophet's Rock's Rocky Point Vineyard in Bendigo, beside Lake Dunstan. The site is steep and north facing, with free-draining soils dominated by schist. Low yields and careful canopy management help achieve fully ripe, concentrated fruit while retaining the freshness central to the wine's style.
Food Pairing: Excellent lightly chilled with charcuterie, wood-fired pizza, grilled chicken, duck or pork. Its combination of bright fruit, gentle tannins and freshness also makes it particularly good with barbecue dishes, tuna, grilled vegetables and mildly spicy Asian food.
