Nuits-Saint-Georges is particularly associated with Pinot Noir wines offering greater structure and substance than some of Burgundy's more delicate expressions. Here, that distinctive character is complemented by the concentration and complexity associated with old vines.
Domaine Robert Chevillon is a respected family estate with generations of experience in Nuits-Saint-Georges. Today, the domaine is associated with Denis and Bertrand Chevillon, whose careful vineyard management and traditional winemaking techniques seek to express the individuality of the appellation.
Although classified at village level rather than Premier Cru, this Vieilles Vignes bottling offers impressive depth, concentration and the capacity to develop further complexity with careful cellaring. It is particularly rewarding for customers seeking a serious, age-worthy Burgundy rather than a lighter, immediately approachable Pinot Noir.
Winemaking
The Pinot Noir grapes are harvested by hand and carefully sorted before undergoing a short period of cold maceration. Fermentation proceeds naturally, with regular punching down and pumping over to extract colour, flavour and structure.
The wine is subsequently matured in oak barrels for approximately 15 to 18 months. Oak is used to support the wine's development rather than dominate its fruit and vineyard character, contributing subtle spice and additional complexity. The Vieilles Vignes bottling typically receives a relatively restrained proportion of new oak.
Vineyards
The fruit comes from old Pinot Noir vines in Nuits-Saint-Georges, within Burgundy's prestigious Côte de Nuits. The vines average more than 60 years of age, contributing to the concentration and depth of the wine.
