Tasting Notes
Apassimento Enigma undergoes a process to partialaly dehydrate the grapes creating a greater concentration of colours, aromas and flavours in the wine.
This has resulted in a wine that is poised and perfectly balanced, intense purple-black in colour with a harmonious bouquet of red and black berries. The flavours are intense, with black berries to the fore, with soft and sweet tannins on the finish.

The grapes are harvested in late autumn, by which time the grapes have shrivelled to raisins and are already partially dried on the vine.
The appassimento process means the grapes are left to dry in baskets until December after the manual harvest and selection. Air circulation keeps the grapes from growing mould. At the end of December, the maceration takes place very slowly at low temperatures and the wine is kept on lees until March.
The wine is not aged in oak.
