Domaine Talmard is located near Mâcon in the village of Uchizy. A family winery, which was established in 1900 and can trace its winemaking roots back to 1645 when the Talmard family were making wine, though mainly for their own and friends' consumption! Today, the winery has a large focus on environmental farming and is a certified 'Haute Valeur Environnementale'(HVE) or 'High Environmental Value' producer.
After the grape harvest, the Macon Uchizy is vinified at controlled temperatures using indigenous yeasts. The philosophy of using natural products continues with only non-allergens used - even the sulphites are natural, being quarried rather than produced from petrochemicals. After fermentation, the wines are then regularly 'racked' (sieved to remove any unwanted organic matter) whilst ageing in vats before being bottled.

This is an easy-drinking wine which is good as an aperitif and works really well with cheeses (particularly goat's cheese), cold meats and pâtes.
