The nose is full of berry fruit and cherry aromas mixed with a light yeasty background. The taste is underpinned by good minerality then brings forward the cherry and raspberry flavours in a fine mousse that is elegant and full of life. The colour looks amazing; a fresh salmon silvery pink so much to enjoy.

The rose is a mix of the Pinot Noir and Chardonnay grapes fermented separately too extract the delicate pink colours of the Pinot. Carefully blended it is left in bottle to age with the second fermentation which develops the wines character before being disgorged . The vines thrive in the limestone soils, so classic in producing good sparkling wine and essential to add that final mineral touch that gives the finesse and lasting finish

A superb Rose wine, it is remarkably versatile and is so enjoyable chilled on its own by the glass. It is a great match with poached salmon (hot or cold), as well as the staples such as pasta and (surprisingly) pizza. It also has the character and weight to lift summer fruits, especially strawberries and raspberries. Mmmmmmm
