Tasting Notes
A vintage Prosecco, Mabis has a lovely, lively mousse with delivers hints of honeysuckle on the nose and a real freshness. On the palate, it is appley and quite full, with well-balanced acidity and a really tasty, slightly sweet, peachy finish. This a super-clean and classy Prosecco with no harsh edges (which are so often present in cheaper Proseccos) whatsoever. Whilst it is a dry sparkling wine, it is not as dry as some Proseccos, hence we have classified it as 'fruity'.
About
A family run winery, Mabis Prosecco is made by brothers Martino and Maurizio Biscardo, one of the few winery owners in Italy who also produce wines in Sicily - a long way from their home and base in the beautiful walled town of Soave. Family wineries like these epitomise the very best of what the wine world has to offer. Passionate, conscientious and so enthusiastic about his wines, Martino is also one of the nicest guys you could wish to meet, as are the rest of his family for that matter.
With a focus on quality, the grapes for this Prosecco are harvested by hand, early in the morning when the fruit is still firm. The grapes are then sorted and destemmed in a temperature controlled area. This care prevents the fruit from bruising and ensures that juice that is pressed is as clean and fresh as possible. Fermentation is done in stainless steel, temperature controlled tanks with no oak used in the process and with as little interference as possible.

Served well chilled, Mabis Prosecco is great just on its own with friends. We also love it with Indian, Thai and Chinese and other spicy food.
