Golden yellow with a persistent, fine mousse which lasts in the glass. Delicate aromas of dried fruits and brioche lead into a light palate, though with considerable depth and elegance. The finish is long and fresh, finishing with clean citrus and green apple flavours.
About
Taittinger can trace its roots back to 1734 when it was established by Jacques Fourneaux. It was only in 1931 when the estate was bought by Pierre Taittinger that the house acquired its current name. It was then and still is a family business run by Pierre-Emmanual Taittinger and his son, Clovis and daughter Vitalie. Perhaps one of the most remarkable and little known features of Taittinger are its tunnels and cellars which were cut below ground by the Romans to supply stone for the buildings in what is now Reims.
Taittinger Brut Reserve NV is Taittinger's signature champagne. It is the benchmark from which they are judged and is consistently excellent. A blend of 40% Chardonnay, 35% Pinot Noir and 25% Pinot Meunier, it is blended primarily from the initial pressings which are then topped up with a small amount of the reserve wine (to ensure consistency from one vintage to the next). It is then aged for 3 - 4 years before its release. This ageing is essential to give the champagne its depth, complexity and breadth of characteristics. Amongst other things, it is a lack of ageing in 'value' champagnes which sometimes makes them tart and unpalatable.

A very elegant champagne, Taittinger Brut Reserve is lovely just on its own. Good food matches include smoked salmon, oysters and other shellfish or simply prepared fish dishes.
