Domaine du Seuil is produced by the Allison family at Château du Seuil, an estate overlooking the Garonne in southern Bordeaux. The family began converting its vineyards to organic farming in 2009, with the estate's parcels subsequently achieving organic certification.
This Cadillac Côtes de Bordeaux combines Cabernet Sauvignon, Merlot and Cabernet Franc. It offers a particularly approachable expression of Bordeaux: ripe blackberry, raspberry and plum provide plenty of fruit, while the Cabernet varieties contribute structure and savoury complexity. The result retains recognisable claret character without becoming excessively firm or heavy.
Winemaking: The wine is made from organically grown grapes, with the different Bordeaux varieties used to balance ripe fruit with freshness, structure and complexity. Oak contributes subtle savoury and spicy character without dominating the fruit.
Vineyards: Domaine du Seuil comes from the Cadillac Côtes de Bordeaux side of the family's estate, across the Garonne from their Graves vineyards. Here, soils incorporating alluvial sand and clay produce a medium-bodied style, while organic vineyard management is central to the estate's approach.
Food Pairing: Excellent with roast lamb, steak, beef casserole or duck, while its ripe fruit and balanced tannins also make it a good match for roast pork, sausages, grilled meats or hearty mushroom and lentil dishes.
