The family's winegrowing history stretches across five generations. Throughout that time, its central belief has remained remarkably consistent: the quality and identity of a wine must first be created through the understanding and care of its vineyards.

Vineyards
Sierra Cantabria Reserva is made from 100% Tempranillo grown in old, family-owned vineyards around San Vicente de la Sonsierra.
The vineyards are cultivated using an integrated approach that respects the environment and the natural rhythms of the vines. Organic fertilisation is used, with minimal intervention intended to encourage a close adaptation between the vines and their surroundings.
The location beneath the Sierra Cantabria mountain range helps shelter the area from colder northern winds. Together with the elevation and local growing conditions, this allows Tempranillo to achieve ripe flavour while preserving the freshness required to keep the finished Reserva balanced.
The importance of these vineyards is not simply their age or location. It is the family's accumulated understanding of how they behave: which parcels ripen first, which retain freshness and how each responds to the conditions of an individual vintage.
That knowledge cannot be recreated quickly in the winery. It is inherited, observed and refined across generations.
Winemaking
The grapes are completely destemmed before traditional vinification. The wine is then matured for 17 months in Bordeaux-style barrels, using 70% French oak and 30% American oak.
Only 20% of the barrels are new, while the remainder have previously held no more than three wines. This careful mixture allows oak to contribute vanilla, spice, toasted complexity and structure without overwhelming the Tempranillo.
The French oak helps provide refinement and shape, while the American oak contributes the familiar vanilla and sweet spice associated with mature Rioja. Neither is intended to replace the fruit.
The result is a wine in which maturation can be clearly tasted, but does not become disconnected from the vineyard that made the wine possible.

For cheese, try mature Manchego, aged Cheddar or other firm, savoury styles. The wine has sufficient structure for strongly flavoured food, but its freshness means it need not be reserved only for the richest meals.

Serving & Cellaring
Serve at approximately 16–18°C. Opening the bottle around 30 minutes before drinking should allow the fruit, spice and balsamic notes to become more expressive.
It is enjoyable now for its balance of ripe fruit and developed complexity, particularly after a little air. Properly stored bottles should also continue to evolve, gradually becoming more savoury and integrated as the primary fruit softens.
