Dom Pérignon Vintage 2015 is a powerful, beautifully composed vintage Champagne, combining generous ripe fruit with remarkable precision, freshness and depth. Rich yet controlled, the palate brings together citrus and stone fruit, toasted and roasted nuances, fine minerality and an elegant underlying bitterness that gives the wine tension and length. Tasting Notes

Nose

Initially restrained and complex, gradually opening to reveal ripe peach and nectarine, citrus zest and delicate floral notes. With air, deeper toasted, cocoa and roasted nuances emerge alongside subtle spice and mineral notes.

Palate

Broad, concentrated and finely textured, with generous ripe fruit balanced by bright citrus freshness and a precise mineral character. The wine has impressive density without feeling heavy, while its fine mousse and subtle savoury bitterness bring definition and tension.

Finish

Long, structured and persistent, with citrus, mineral and gently toasted flavours lingering alongside a fine bitter note that keeps the finish fresh and beautifully controlled.

About Dom Pérignon

Dom Pérignon is one of Champagne's most celebrated names and is produced exclusively as a vintage Champagne. The house traces its inspiration to Dom Pierre Pérignon, who became procurator of the Abbey of Hautvillers in 1668 and devoted much of his life to improving the wines of Champagne.

Unlike houses that maintain a non-vintage expression, Dom Pérignon's philosophy is centred entirely upon individual harvests. A vintage is produced only when the house believes the year's fruit can express both the character of that harvest and the distinctive harmony associated with Dom Pérignon.

Winemaking

Winemaking: Dom Pérignon Vintage 2015 is an assemblage built around Chardonnay and Pinot Noir from the 2015 harvest. Blending is fundamental to the Dom Pérignon style, with each vintage created to find harmony between the personality of the year and the enduring character of the house.

Following the secondary fermentation in bottle, Dom Pérignon undergoes prolonged maturation on its lees in the cellars. The house allows at least eight years for the creation and maturation of a Dom Pérignon Vintage before release, developing the texture, complexity and integration that distinguish the finished Champagne.

Vineyards

Vineyards: The 2015 vintage was shaped by a growing season of striking contrasts. Warm, dry conditions contributed concentration and ripeness, while the fruit retained the freshness required to give the finished Champagne balance and definition. The resulting wine combines the generosity of the vintage with the precision, structure and mineral character central to the Dom Pérignon style.

Food Pairing

Dom Pérignon Vintage 2015 has enough depth and structure to work throughout a meal rather than simply as an aperitif. Try it with lobster, scallops, turbot or other richly textured seafood, roast poultry or dishes featuring mushrooms and truffle. Its combination of ripe fruit, freshness and subtle bitterness can also work particularly well with refined dishes incorporating toasted, roasted or lightly smoky flavours.
