About
Viticulture: Traditionally grown, the fruit is machine harvested at night to avoid oxidation and preserve the delicate aromatic profile. Picked at optimum ripeness.
Winemaking: The grapes are pneumatically pressed, racked for 24 hours and then fermented at a cool temperature (c15 degrees) in stainless steel tanks. The wine is then aged on its lees for 3 months with regular stirring to add smoothness and texture to the wine.
