Olim Bauda is a respected family winery in Piedmont with a strong focus on sustainable viticulture and expressing the character of the region’s traditional grape varieties. The estate is known for producing elegant wines that combine authenticity, freshness and regional identity.
Winemaking: Cortese grapes are harvested at optimal ripeness and gently pressed before fermentation in temperature-controlled stainless steel tanks. The wine is aged on fine lees for a short period to add texture while preserving its fresh fruit and mineral character.
Vineyards: The vineyards are located within the Comune di Gavi, where limestone-rich soils and a moderate climate create ideal conditions for Cortese. These vineyard sites contribute the freshness, minerality and elegance that define the finest Gavi wines.
