After being harvested by hand the pressing is very slow to respect the fruit, with ageing in older oak barrels for 12 months.
The grapes for this Chablis come from the Valley of Vauvillien, where the soils are of Kimmeridgian limestone, containing millions of tiny marine fossils which was once a sea bed many millions of years ago.
This marine origin gives the wines of Chablis their unique flavour.
