Tasting Notes
A very pale straw colour with a faint greenish tinge. The bouquet is floral blossom, with a slightly green herbaceous note and a background confectionery note.
The palate is full and rounded and is reminiscent of a tropical fruit salad, packed with definite passion fruit, lychee and mango flavours. The palate is dry and crisp but this is deceptive because there is a good burst of natural sweetness at the front of the palate.
The wine is fresh and fruity with crisp acidity, medium bodied and has a long, balanced finish.
About
Sauvignon Blanc sourced from vineyards in the southern Adelaide Hills wine-growing region of Australia. As you might expect from the SYPs, this is not a straight forward Sauvignon Blanc. Some of the wine undergoes some barrel fermentation and some “solids fermentation to male things a little rocking.” This is a generous, upfront wine with good crispness, minerality and crunchy passionfruit flavours leading to a lively, dry finish.
