Deep in the heart of the Languedoc-Rousillon lies the small town of Saint Chinian. In a fast-moving world, time has stood still here - no population explosion - indeed, since 1962, the population has actually declined. It's in this land that lazy hot summer days give way to balmy nights, which are perfect conditions for the Syrah and Grenache that make up this little beauty. Slowly ripened, the grapes are rich and sweet, which accounts for the big, full-fruited nature of the wine.

If you can get it, a 'daube de sanglier' (wild boar) will give you a really authentic experience of life here. Otherwise, rich tomato-based stews, red meats and herby lamb dishes are positively enhanced by this wine.
