The foundation is predominantly Tempranillo from the family's mature vineyards in San Vicente de la Sonsierra, with a small addition of Graciano. Tempranillo provides the ripe fruit and structure, while Graciano contributes freshness and definition. Together, they give the wine the character and balance needed to develop through extended maturation.
Ageing in American oak brings familiar Rioja notes of vanilla, toast and spice. More importantly, prolonged maturation allows the wine's components to become increasingly integrated. Tannins soften, fruit develops more savoury dimensions and the oak becomes part of the overall flavour rather than a separate influence.
What makes this recognisably Sierra Cantabria is the freshness that survives that process. The mature flavours have greater depth and harmony, but they have not replaced the wine's original fruit character.
