Fontanafredda was founded in 1858 and is a story of love between Vittorio Emanuela and 'la Bella Rosina' for whom he purchased the estate. The first Fontanafredda wines appeared in 1867, and by 1878, the estate was established with over 300 hectares cultivated. Sadly, in 1931, the advent of phylloxera, a disease which devastated vines across europe, resulted in the sale of the winery to a Tuscan bank. Whilst the winery continued to grow and indeed blossom, it wasn't until 2008 that it was purchased and returned to private ownership.
The Barolo is made with 100% Nebbiolo and is vinified traditionally with 2 years ageing in a mixture of French and Slovenian oak barrels. The wine then spends at least a further 12 months in the bottle before it is released.

Because of the balance of fruit and tannin, this wine needs food with some salt to bring out its best. Red meats, game and rich stews work as do big pasta dishes with parmesan. Hard cheeses such as pecorino, parmesan, comté or a good quality mature cheddar also work well.
