This is an elegant Chablis, herbaceous on the nose, fresh-washed with citrus, particularly lemon and grapefruit, in the mouth, all emphasised by a savoury minerality.
About
Joseph Drouhin was founded in 1880 and remains a tour de force in the wine world. In Chablis, they own around 6 hectares of vines (15 acres) in the Valley of Vauvillien, nestled between the Mont de Milieu and Montée de Tonnerre Premier Cru vineyards. The Kimmeridgian limestone contains millions of tiny marine fossils embedded in a kind of whitish mortar which were probably once the bottom of the sea hundreds of million years ago. This marine origin gives Drouhin's Chablis its unique flavour.
Harvesting is all done by hand and the grapes are pressed gently, both of which avoids bruising and damage to the grape which in turn, makes for a fresher, cleaner wine. The wine is aged for 12 months in older oak barrels to reduce the impact of the oak on the wine and retain its characteristic minerality.
