The wines of Domaine de Vauroux are the result of exceptional “terroir“ and ancient know-how that is constantly being perfected and enriched. The vines draw their mineral energy from deep in the marl limestone. The famous Kimmeridgean rock below them is what gives Chablis wines their pure, crystalline character.
The wines and appellations of Chablis are tiered, rather like a pyramid, with Petit Chablis being at the base, Chablis above it, Premier Cru Chablis the next up and Grand Cru Chablis at the top. That said, with the exception of Grand Cru Chablis, there is a huge difference in quality despite the appellation, with some Petit Chablis and Chablis delivering far more than others higher up the pyramid. Sadly and much to the frustration of the better winemakers, there are also more than a few producers who, despite their vines being included the appellation and their wines wearing the name Chablis, focus on quantity rather than quality. You have been warned!
Ideal with...
Try it with any white meats or seafood such as boiled lobsters with tarragon butter, sauteed langoustine or pork medallions with a mustard cream sauce. On it's own, it delivers much more than many well know names and, whilst a Chardonnay, it is easier to drink and offers so much more than other varieties, such as Sauvignon Blanc.
